This wine is from a Chasselas plot in Crépy, a sub-appellation of Savoie facing the West and Lac Léman. The vines are planted on glacial moraines, molasse and yellow clay.
The yield is 35hl/ ha, the Chasselas grapes are manually picked by hand in two passages for optimum ripeness. Soft pressing with fermentation at 16 °C. The wine is then aged in 200L/ 300L clay amphorae for 12 months. There is no filtration nor is sulphur added throughout the winemaking process.
Pale gold hue, with a brioche appearance. The nose reveals a bouquet of biscuit, quince, hazelnut, anise and gentian. The light, stewed palate rests on a mineral frame.
