This wine is from a higher parcel of a plot in Crépy (the lower part of the plot is made into another wine: Les Vignes de Paradis "Un P'tit Coin de Paradis" 2019), one of the crus of Savoie facing the West and Lac Léman. This part of the plot has more molasses in the soils, and gives smaller, more intense grapes.
The yield is 35hl/ ha, the Chasselas grapes are manually picked by hand in three to four passages for optimum ripeness. Soft pressing with fermentation at 16 °C. The wine is then aged in concrete eggs for 7-8 months before a light filtration on white soil, less than 30 mg/ L of sulphur is added during bottling.
The wine is pale gold with green tints, buttery palate, brioche and smoke. On the nose, there is refined fruit accompanied by floral notes. Pear, citrus zest, fenugreek, fine, precise minerality.
