The land

The Godello Calcáreo - or simply "CAL" is from a plot of Godello vines planted 40 years ago in the town of San Juan de la Mata, within the boundaries of DO Bierzo. The vineyard is located on an old chalk mine, which is a rare soil to find within Bierzo. It is exactly these soils that give the unique character of the resultant wine.


The grapes are destemmed before a short skin maceration to give more flavours and texture. The fermentation is spontaneous with native yeasts in French oak barrels and 800L clay amphorae. It is aged in the same containers for 13 months before bottling. Production: 3311 bottles

The wine

On the nose, you will get fresh citrus fruits and wet stones, and a hint of rich stone fruits and almonds as well. It has a unique salinity on the palate, with lean acidity and round texture from the slight skin contact before fermentation. The funky flavour of Cantonese preserved salty kumquat together with the salinity at the finish makes CAL a perfect pairing with steamed local seafood, unconventional yet a killing one.
